Vietnamese cookery class

This evening we went to a restaurant where, under supervision of the very lovely chef, we cooked our own dinner. They use so many herbs and he passed them all round for us to smell and taste. Using a mix of six of them he divided it in two then added spring onion to one and something else, we don't have to the other and the difference in taste to each mix was amazing.
