Big food day today!!! 😋

📍 This morning we ventured into the Sicilian countryside for a cooking class with a beautiful lady named Nella. The Tenuta Carbonara Farmhouse was a 20 minute drive from Ragusa into the Iblei mountains. The property is Nella’s family farm that’s been operating for generations. All the produce used in the cooking class was sourced from the organic farm - from the olive oil, the ricotta cheese to vegetables and the grain for the flour which is a pale yellow colour and is only grown in this area.

This was hands down one of the best experiences 🥹We spent three hours in Nella’s kitchen learning, preparing and cooking 5 different traditional Sicilian dishes including:
1. Caponata - chopped/fried veg in a tomato sauce
2. Focaccia - folded with tomatoes and cheese
3. Ricotta ravioli (ricotta from the farm was out of this world delicious)
4. Cavatelli pasta with a pork sauce (homemade tomato paste made in a traditional way by smashing the tomatoes then putting them out in the sun to concentrate. This made the sauce!
5. Cassatine with ricotta + cinnamon for dessert (this was using the leftover dough so there was no wastage)

We drank some delicious wine while we prepared the food and then sat down to enjoy the 5 courses with our host in their dining room 🍷

At the end, Nella gave us all certificates for our participation in the cooking class. It was so cute 🤣
We went home for a relax and much needed siesta.

📍 Headed into town at dusk for a walk. It was golden hour, Ragusa Ibla looked so beautiful at this time of night! We love how quiet it is here, not your typical “tourist” place.
