    Next the blocks are milled (chopped) and salted. Finally the molds are filled and put into the cheese press overnight. Then cheeses are wrapped in cheesecloth, pressed again, and finally put into storage (sometimes a cave is used like in the old days, to impart a different flavor). We got to taste the different ages of cheese, and some good flavors as well. We love to see how things are made!Read more
