    1. Huge traditional style water steamer heats up gigantic pot of rice (100 tonnes per season) on floor above
    2. Fermentation tanks (4 weeks, longer than beer and wine because lower temp, max 12oC): more mold for sweeter, more yeast for drier
    3. Storage (6 months to 3 years, no need as long as wine because the taste doesn't change much after that)
