When Matt was in the cooking competition up in Minnesota and Andrew and I went to their $100/plate dinner that was served by the head chef of the hotel . The first course was sea urchin aspic. It had pieces of sea urchin floating in clear gelatin with sea urchin roe on top. Andrew looked at me and said "are we at the white house?" (Growing up we always said you have to eat what you are served because what if you were invited to the white house-would you refuse to eat it?) The judges that were sitting at the table said it was not very good and didn't eat much of it much to our delight :-) .
