Great visit to a cheese warehouse and some great tasting cheese. Nice explanatory movie. A Dutch person eats one wheel of those per year. Those big wheels weigh around 34 lbs each and cost between 2-300 Euros. More pics added later when I find wifi. Nice cheese tasting afterwards with a glass of port. What is also interesting is that once a week, a whole team of young workers descends upon the warehouse and turns each one of these over. They wipe down the wooden plank and then polish the cheese with special cloths. If the cheese was not turned, then all the flavor would sink to the bottom of the cheese and the top would be tasteless. All the polishing removes any fungi growing on the outside of the cheese. Before temperature controlled rooms, they had to turn all the cheeses daily, so an all day job every day. Now a once a week job. There are two floors of these cheeses - 70 tons of cheese!Read more
