Varškėčius - Pancakes w/ Cottage Cheese

This was a delicious Lithuanian lunch in a sidewalk cafe in Old Town Vilnius just like my Grandma Slykas used to make. These are high-protein pancakes because of the cottage cheese. Yummy!!
