Kao Soi Gai is a must have North Thai chicken curry. Cooked KSG using this recipe (http://tinyurl.com/hvvbu7o) with slight modifications. First I cooked the curry using Thai Massaman curry paste. Then added lemon and coconut milk and reheated but not boil the curry (Coconut milk turns to oil when it's boiled and loses its taste, I think). I also pre boiled the chicken and discarded the liquid to remove some of the chicken fat. It was delicious.
