In 1889, Queen Margherita of Italy and her husband visited Naples and were tired and hungry. It was late and Chef Raffaele Esposito of Brandi was all closed up but with the few ingredients he had left he prepared the fastest dish he could think of, pizza. It featured fresh red tomatoes, white mozzarella, and fresh green basil and olive oil. The colors of the pizza resembled the Italian flag, and the queen declared it her favorite. Esposito named the pizza after the queen, and it became a classic Neapolitan specialty. It is prepared in a wood-burning oven and has a specific size and dough construction.
