• Daio wasabi farm, Matsumoto.

    After a two hour drive from Takayama we arrived at Daio (King) wasabi farm. We walked around looking at the growing process.

    An essential requirement is lots of fresh, clean flowing water.

    The root of the plant is grated to be ready for the table.

    Lunch was at the Oasis Restaurant at the farm. Yet again a traditional Japanese meal - we are becoming 'Japanised'.
