Whilst touring China I learnt about their famed local cuisine especially “Peking Duck” by watching some of chefs in action.
They use special wood to cook the duck in clay ovens so that the smoke infuses the meat very subtly. The dish is famous from Beijing (Peking) that has been prepared since the imperial era. The meat is characterized by its thin, crisp skin, with authentic versions of the dish serving mostly the skin and little meat, sliced in front of the diners by the cook. Ducks bred specially for the dish are slaughtered after 65 days and seasoned before being roasted in a closed or hung oven. The meat is often eaten with spring onion, cucumber and sweet bean sauce with pancakes rolled around the fillings. Sometimes pickled radish is also inside, and other sauces (like hoisin sauce) can be used.Read more

Kunming Lake is a man-made lake. Its predecessors were called Wengshan (Jar Hill) Pond and Xihu Lake. They were reservoirs which had been used as sources of water both for the city and irrigation of fields over a period of 3,500 years. Guo Shoujing, a famous astronomer and engineer in his time, developed it into a reservoir for the capital of the Yuan Dynasty in 1291. The conversion of the area into an imperial garden was commissioned by the Qianlong Emperor with the work being carried out between 1750 and 1764. In the course of creating the gardens, the lake area was extended by a workforce of almost 10,000 laborers.

In the year 1990 and 1991, the Beijing Municipal Government undertook the first dredging of the lake in 240 years. A total of 652,600 cubic metres (853,600 cu yd) of sludge were removed in the work. 205 Japanese bombs dropped during the Sino-Japanese War were also found.Read more

Met this amazing Chinese local who was wearing a medal and very proud of it indeed. The biggest issue was that none of us could work out what it represented as no one spoke English :).
The summer palace gardens are exquisite and large with a big lake in the middle of them.
Longevity Hill is about 60 m (200 ft) high and has many buildings positioned in sequence. The front hill is rich with splendid halls and pavilions, while the back hill, in sharp contrast, is quiet with natural beauty. The central Kunming Lake, covering 2.2 square kilometres (540 acres), was entirely man-made and the excavated soil was used to build Longevity Hill.

In December 1998, UNESCO included the Summer Palace on its World Heritage List. It declared the Summer Palace "a masterpiece of Chinese landscape garden design. The natural landscape of hills and open water is combined with artificial features such as pavilions, halls, palaces, temples and bridges to form a harmonious ensemble of outstanding aesthetic value".Read more

More photos of the Summer Palace. It is curious to me as to how the Chinese Government justify the maintenance of the palace. Is it because the palace is a world heritage listed site or because it is a reminder of the previous privileged class structure before the communist regime took over or just because it represents a significant part of Chinese history.
It is an amazing expanse of palaces and servants quarters.Read more

The Palace Museum (cont'd)

It's home to over 1.8 million pieces of art, mostly from the imperial collection of the Ming and Qing dynasties. The 20th century saw its expansion through new acquisitions, transfers from other museums, and new archaeological discoveries.
According to the Beijing Evening Post, the museum has seen more than 17 million visitors in 2018, which would make it the world's most visited museum. It has an average of 15 million visitors annually since 2012. Due to this increased pressure, the management has set a daily limit for visitors of 80,000 since 2015 to protect the ancient structure and the experience.Read more

Tiananmen Square or Tian'anmen Square (天安门, is a city square in the centre of Beijing, China, named after the Tiananmen ('Gate of Heavenly Peace') located to its north, separating it from the Forbidden City. The square contains the Monument to the People's Heroes, the Great Hall of the People, the National Museum of China, and the Mausoleum of Mao Zedong. Mao Zedong proclaimed the founding of the People's Republic of China in the square on October 1, 1949; the anniversary of this event is still observed there.
Tiananmen Square is within the top ten largest city squares in the world (440,500 m2 – 880×500 m or 109 acres – 960×550 yd).
It has great cultural significance as it was the site of several important events in Chinese history.
It is also the site of the Tiananmen massacre where students protesting for democracy where attacked by the army and killed.Read more

Beijing, China’s sprawling capital, has history stretching back 3 millennia. Yet it’s known as much for modern architecture as its ancient sites such as the grand Forbidden City complex, the imperial palace during the Ming and Qing dynasties. Nearby, the massive Tiananmen Square pedestrian plaza is the site of Mao Zedong’s mausoleum and the National Museum of China, displaying a vast collection of cultural relics.
We were very fortunate because when we arrived there was minimal pollution over the entire time we stayed...quite hot but relatively clean air.Read more

Shanghai Airport is a major aviation hub of China and serves as a main hub for China Eastern Airlines and Shanghai Airlines. In addition, it’s a hub for Spring Airlines, Juneyao Airlines and a secondary hub for China Southern Airlines. PVG airport currently has four parallel runways and an additional satellite terminal with two more runways has been recently opened. Its construction provides the airport the capacity to handle 80 million passengers annually. In 2017 the airport handled 70,001,237 passengers. This digit makes Shanghai airport as the 2nd busiest airport in mainland China and it’s positioned as the 9th busiest airport in the world. By the end of 2016, PVG airport served 210 destinations and hosted 104 airlines.Read more

This was known as the City of God and is located in old Shanghai.
It has old architecture and beautiful gardens with many water features.
The City God Temple or Temple of the City Gods, officially the City Temple of Shanghai, is a folk temple located in the old city of Shanghai.
It commemorates the elevation of Shanghai to municipal status and is the site of the veneration of three Chinese figures honored as the city gods of the town.Read more

Shanghai Boulevarde

After dinner we walked along the river on the famous boulevard to observe more of the night skyline. Shanghai is such a contrast to the other cities in China as it represents the economic way forward for the country yet unfortunately it is not possible to remove the subtle yet constant presence of the government and its control over people’s lives.
Alas it is the same the world over however some are more draconian than others and in Australia we haven’t be thankful for our freedom.Read more

We decided to spend an evening having drinks before going out to eat at one of Shanghai’s better restaurants. They specialized in Peking Duck and so I obliged them and ordered it...lots of it. It was also fascinating to see them cook the duck in the traditional ovens and with the traditional scented timber that adds to the flavor.
The restaurant also allowed you to watch the chefs in action which was also interesting.Read more

As with most cities and counties of the world there are strong influences from other countries either through the advent of trade, war or immigration.
The French quarter is such a place where the architecture and landscaping has very French mood to it.
In a funny way it reminded me of a more stylish aspect of Shanghai China that wasn’t associated with the crowded, loud and bustling other parts of the country.
The shops in this section were more stylish and sophisticated as well.Read more

It’s seems that silk and Asian countries are aligned maybe it’s the climate...who knows but they’re into it.
It was incredible how strong and flexible the silk worm silk is. We proved this by stretching out a small square of silk to become approximately the size of a sheet.
