    A few months back, we grabbed a ham, cheese, and tomato toastie from a little café near the Riverway Library in Townsville. Now, I’ll be honest — the details are slightly foggy (as most great meals are when you’re famished and slightly delirious), but I remember this toastie being very good.

    The bread had that golden, buttery crispness that crackles just enough to let you know someone in the kitchen respects the art of the sandwich press. Inside, there was no skimping on fillings — a generous helping of ham, proper melted cheese, and tomato that was juicy but not soggy (a fine line many dare not cross).

    Was it the culinary masterpiece of the century? Hard to say. Was I extremely hungry and therefore possibly under the spell of the “hunger makes everything taste amazing” phenomenon? Almost certainly. But you know what? Sometimes that’s the best way to enjoy a toastie — simple, hot, buttery, and deeply satisfying when you need it most.
