    Our guide reminded us that Spain’s the 3rd most mountainous country after Switzerland and sheep and cheese production has a strong heritage. We passed classic Etxhas. The laxta (latcha) sheep make a special strong cheese only made in the Basque Country. The raw milk is brought just under the boiling point. Rennet is added to coagulate it, and it becomes quark or eventually hard cheese.Read more
