On our way to Grundarfjordur

Since we didn’t get home until 4am we paid a little more and got a late checkout from the hotel and had a lie-in. We had burgers at Le Kock (yes, all the jokes…) and headed north. On the way we stopped at the Settlement Center in Borgarnes where we learned about the settlement of Iceland and the saga of Egil in a walk-through narrated exhibit. We had a snack there as well. I’ve decided I love skyr, an Icelandic yogurt that is not sweet, but is also not as sour as Greek yogurt, but very much a similar texture. Covered in a berry sauce it was a perfect snack. We then finished the drive to our Airbnb, a home called Hellnafell. It was dark when we got here so we could barely see the mountain view of Kirkjufell. We headed to dinner at Bjargarsteinn Mathus. The food was amazing, but while we we there, the Northern Light came out and put on a show right over the mountain. Stunning.Read more
