De-stemming process (in photos). The juice is kept in the steel tank (with skins) for up to 30 days, depending on the weather. Skins are then removed and the juice is transferred into a qvervi.

TravelerThe passionate guy is the winery’s long time manager. He spoke of the extraordinary hard work of their team this year and how many had left other jobs as teachers, carpenters, etc to help with the harvest and winemaking . The founder of the winery died 2.5 years ago and his son, in his early 30’s, now runs it - hence the manager plays a major role.
